Who knew this powerhouse of the leafy greens possessed an unending list of benefits… vitamins and minerals, anti-inflammatory properties, Omega 3’s…and on. If you haven’t been cooking with Kale, start with something simple like this Lemony Kale Salad. The ingredient list is shorter than short…Kale, shaved Parm and Hazelnuts…and the dressing is a simplequietmodern basic…lemon juice and olive oil. You can’t beat it for keeping on track with your New Year’s resolutions to eat healthier, look better, live longer.

Presto…pesto

Well, I love pesto. On pasta hot or cold…on pizza…even in potato salad. But, I’ve never had arugula pesto. How did this happen? I love arugula too and yet this had somehow missed my plate. When I found this recipe , which couldn’t be simpler, and tweaked it based on what was at hand…I had a hit. The simple ingredients provided a great lemony mix…fresh. There was no waiting for a pizza or focaccia dough to rise so I split a small Syrian wood baked loaf, spread the pesto and topped it with some bocconcini mozzarella…simple…perfect.

I say I can’t wait for summer. I need a fix now! Gather up a few redskins, some spring onions, a couple of hard boiled eggs, celery and radishes. You are all set my friend…while the potaoes are boiling you can prep your vegetables and mix up that dressing. Toss it all together and you’ve got potato salad…winter for me is now officially over, no matter what the calendar says. SIMPLE. I love this alone for lunch…but hey, did someone say ribs???
