The idea of blueberry pancakes always sounded good but seemed to lack a little something once I took a dive in. I finally figured out that it wasn’t the individual elements, it was the way they went together that mucked things up. So, to simplify, I start with an Austrian Pancake.  While that’s  baking there is just enough time to reduce some pure maple syrup by about a third…to thicken it and intensify the flavor. Off  heat  the fresh berries are gently added to the syrup…warming them and taking the raw edge off without actually cooking them. Then plating. Who knew that a little deconstruction would lead to this… simplequietmodern pancake perfection.

Easter’s on its way. Now’s the time to gather some sweet treats while the store shelves are packed with your childhood favorites…malted milk eggs ( the original sweet & salty), jelly beans and ( they better only be yellow and shaped like chicks) Peeps… and start getting your list together for Easter brunch, lunch or dinner. Simple glass cylinder bowls filled with sprouted wheat grass will make modern and cost-effective centerpieces with the addition of  cracked egg shells and a few pastel jelly beans and a leather handled galvanized bucket would be the perfect Easter Basket if not otherwise put to use keeping wine chilled. Shake up your usual deviled egg recipe with a touch of cornichon or capers and consider a simple dessert of spring berries and Italian Almond Cookies.  That was easy. Red White and Blueberry

Well, that would have been a more appropriate plan for the 4th of July, but I really love blueberries and nectarines. It’s my favorite of the ” crisp” desserts. It’s simple. I love blueberries. I love nectarines.I love them together. OK, then it got a little confusing when I ran into something called a Peacharine~ 1/2 peach 1/2 nectarine. How bad could that be? As it happens, they are fantastic! They almost tasted more “peachy” than most of the peaches I’ve had in recent years with a rich vibrant flavor and as juicy as you’d love them to be. So… that was the new plan, substituting the nectarines with peacharines in my Nectarine Blueberry Crisp. This is simple, simple, simple and there will be nothing left but an empty baking dish. Add this to your 4th menu and let me know if you get any complaints other than you needed to have made two.
