Who’s Ready For Pie?

Making the Cut

Well, it’s time to cull through the stack of Christmas cookie recipes, hold some auditions and see who makes the cut. Sounds brutal, but editing to one selection keeps things simple while still keeping the holiday festive. Espresso Hazelnut Cookies, classic Shortbread and Walnut Horns are being edged out by a twist on last year’s selection…the Chewy Molasses Cookie. By pressing a thumbprint into the center of the cookies while they’re still warm from the oven and filling them with 1/2 teaspoon of raspberry preserves…well, they were simply the hands down winner.

All you could ask for…

Cookie?

Nothing says Christmas like a plateful of homemade Christmas cookies. If you have the time, great, but who wants to run out for that list of ingredients? Relax. Simple shortbreads…using only 3 ingredients you have on hand…to the rescue. Pull out that rolling-pin, some vintage cookie cutters and turn on that oven. If this is the only baking you do this season, no one will be disappointed.

Pumpkin X 2 Part 2

Before you forget you have it, it’s time to put that pumpkin puree that was left over from the earlier soup recipe to good use. We’ve made it through January so why not treat everyone with a batch of these Iced  Pumpkin Cookies. A soft drop cookie with no fancy ingredients…you probably have everything you need in the pantry.
